8 medium potatoes
16 slices of bacon
½ cup chopped onion
2 tablespoons flour
1 teaspoon celery seed
2 tablespoons sugar
1½ teaspoon salt
dash of pepper
⅔ cup of vinegar
½ cup water
2 tablespoons chopped parsley

Directions:

Cook potatoes in jackets* until tender (15-20 minutes). Fry bacon until crisp. Remove from skillet, drain and crumble. Pour off all but 4 tablespoons bacon fat. Add onion, cook one minute. Blend in flour, stir until thick. Add bacon, celery seed, sugar, salt, pepper, vinegar, water. Peel and slice the drained, cooked potatoes. Poor dressing over potatoes tossing lightly. Sprinkle with parsley. Keep in warm oven or crockpot on low until serving time. Fills a 4-qt crockpot.
