1/2 CUP CRISCO SHORTENING
1/C CUP SUGAR
1 PACKAGE DRY YEAST

4 CUPS FLOUR
3 EGGS, WELL BEATEN
1 TBSP SALT


TOPPING:
BUTTER (SOFTENED)
BROWN SUGAR
CHOPPED PECANS

SCALD (HEAT MILK JUST UNTIL TINY BUBBLES START AROUND THE EDGE OF THE PAN) MILK. ADD CRISCO AND SUGAR AND STIR UNTIL MELTED.

WHEN LUKE WARM (105-115 DEGREES) SPRINKLE PACKET OF YEAST ON TOP OF MILK MIXTURE AND STIR A COUPLE OF TIMES.

LET SET 15 MINUTES.

ADD FLOUR, EGGS AND SALT. MIX UNTIL DOUGH IS STICKY. COVER WITH A HOT DAMP CLOTH UNTIL IT DOUBLES IN SIZE.

DIVIDE DOUGH IN 4 PARTS. ROLL OUT ON FLOURED SURFACE (THIN AND ROUND)
SPREAD WITH BUTTER, SPRINKLE WITH BROWN SUGAR AND PECANS.

CUT INTO TRIANGLE SHAPES ( A PIZZA CUTTER WORKS GREAT) AND ROLL UP INDIVIDUALLY.

BAKE AT 12 MINUTES IN 350 DEGREE OVEN. ICE WITH ICING

A LYNCH FAMILY TRADITION FROM MY GRANDMA LYNCH. IT WAS NOT CHRISTMAS MORNING WITHOUT THESE PECAN ROLLS AND THERE WERE MANY A CHRISTMAS THAT I STAYED UP 1/2 THE NIGHT MAKING THESE TO BE SURE THEY WERE SERVED. THEY ARE A TRUE FAMILY FAVORITE AND THE FIRST THING KAYIN ASKS FOR WHEN SHE WALKS THROUGH THE DOOR. I PROMISE AS LONG AS I AM AROUND THERE WILL ALWAYS BE PECAN ROLLS ON CHRISTMAS MORNING !
