16 slices Bacon - Diced
5 lbs. Potatoes
8 Tbsp Flour
2 tsp. Pepper
5 cans Baby Clams
4 tsp. Parsley
3 cloves Garlic
3 - 16oz bottles Clam Juice
1 cup broth Chicken or Vegetable
3 bunches Green Onions diced save tops for garnish
5 Tbsp Real Butter
3½ cups Water
1 tsp. salt
2¼ cups Whipping Cream
4 cups Milk
½ tsp. Thyme
1 Leek finally chopped
2 ribs celery diced

1. In large stock pot cook bacon over medium heat. Stir until getting brown, but not crispy. Remove from pot.
2. Add butter to pot. Add leek, celery, and onions. Sauce until tender. Add garlic and cook an additional minute.
3. Add water, broth, clam juice, salt, pepper, thyme and potatoes to pot. Bring to boil. Reduce heat and simmer 15-20 minutes, until potatoes are tender. Stir to prevent burning on bottom of pot.
4. In bowl mix flour, milk and whipping cream. Mix until smooth, then add to pot gradually. Bring to a boil 1-2 minutes to thicken.
5. Stir in clams, bacon and parsley. Heat clams through. Turn on low heat for 5 minutes.
6. Add the chives and serve.

I make this in a medium stock pot and I very rarely have left overs when 4 adults people are eating on it.
