½ lb bacon, chopped
2 medium onions
4 7-oz cans minced clams
3 lg potatoes, cut in ½" cubes
1 t. salt
½ t. pepper
1 t. basil
1 t. thyme
4 T. melted butter
4T. flour
2 c. heavy cream
3-4 cups milk

Directions:
Directions:
Fry bacon in skillet until crisp; drain, researving 3 T. drippings. Saute onions in drippings until tender. Drain clams, reserving broth. combine bacon, onions, potatoes, seasonings, and 1 cup water in sauce pan. Simmer until potatoes are just tender.

Blend butter and flour. Stir intio soup. Cook for several minutes; stir constantly with whisk. Add clams, cream, and milk; adjust seasonings to taste. Add clam broth if it gets too thick.

Heat to serving temperature. Do not overcook.

Garnish with additional butter, parsely, and paprika. (May substitute firm-fleshed fish for clams.)
