1 pkg. active dry yeast
pinch of sugar
1 1/2 c. lukewarm water
4 c. flour, divided
5 T extra virgin olive oil, divided
1 t salt
1 t kosher salt

Directions:
Directions:
Sprinkle yeast and sugar in warm water, stir to dissolve and let stand 5 minutes. Add 1 c flour, 2 T oil, and 1 t salt to yeast mixture and stir. Gradually add remaining flour. Knead dough 10 minutes, (I use my Kitchenaid and bread hook and it works great.) Coat with oil and let rise in warm place until double or 1 hour. Punch down and gently stretch into a jellyroll pan. Cover and let rise 45 minutes or until doubles. Make small indentations in top with wooden spoon handle, bushing remaining oil and sprinkle with kosher salt. Bake 20 minutes in 450º oven.
