½ c. margarine
1 c. sugar
2 beaten eggs
3 mashed ripe bananas
½ c. chopped nuts
2 c. flour
1 tsp baking soda
⅛ tsp salt
5 T. butter milk (1 c. milk with 1 or 2 tsp vinegar let sit - makes butter milk)
½ tsp vanilla extract

Beat margarine and sugar. Add eggs. Beat in bananas, mix well. Add vanilla and milk.
Add sifted dry ingredients into another bowl. Next alternate dry and wet ingredients. Pour into loaf pans. Bake 350º for approx 1 hour. Cool well.

We had many a rotten banana in our day so we were raised on banana bread. The tradition continues today!!
