The Pancake Mix
4 c old fashioned oats
2 c all-purpose flour
2 c whole wheat flour
1 c brown sugar
1 c instant non-fat dry milk
3 T baking powder
2 T (plus) cinnamon
5 t salt
1/2 t cream of tarter

To make pancakes:
2 c. pancake mix
2 eggs
1/3 c canola oil
3/4-1 c water (make consistency you like)

Directions:
Directions:
Beat eggs. Gradually add oil. Alternate pancake mix with water until ingredients are well mixed. Preheat and oil griddle. Cook until bubbles form around edges and they brown. Turn and cook on the other side.

(Good with chopped pecans added to batter.)
