Bruce Mayo


one onion chopped
2 carrots shredded
1 stick butter
1/2 cup flour
2 cloves garlic
2 strips bacon (optional)
2 cups chicken broth
2 cups milk or buttermilk
500g broccoli florets
2 generous cups shredded old cheddar
Salt and pepper to taste

Chop bacon and fry until crisp. Set aside
Place butter in large saucepan and melt, add onions and saute over medium heat, add the carrots and garlic
Add the flour and stir until it blends with the butter and cooks
Add the chicken broth and stir, until smooth
Add the broccoli
Add the milk and reduce the heat, cook until the broccoli softens, about 5 or six minutes
Season with salt and pepper to taste
Over low hear stir in the cheddar until smooth
Place in bowls, serve garnished with grated cheddar
Serve with warm bread
