¾ c. salad oil
½ c. white wine vinegar with basil
1½ tsp. salt
1 tsp. granulated sugar
½ tsp. basil leaves
¼ tsp. ground thyme
6 peppercorns
1 clove garlic, split
1 bay leaf
1½ lbs. small fresh mushrooms, rinsed, stems trimmed

Directions:

In a 2 or 3 quart saucepan, combine all ingredients except mushrooms: heat to boiling,
Cover: simmer 10 minutes. Add mushrooms: simmer, uncovered, 3. minutes.
Pour mushrooms and liquid into bowl. Cover:chill several hours or overnight, stir occasionally.
Drain and serve as an appetizer or on a relish tray
Yields about 3½ cups.
