1# lean ground beef
1 small onion, chopped
1 clove garlic, minced
1- 10 oz. can tomatoes, chopped
(or 1/2# tomatoes, chopped)
3 c beef stock (or 3 beef bouillon cubes dissolved in 3 c water)
2 T tomato paste
1 10 oz. can kidney beans with liquid
3 c sliced cabbage
1 t salt (omit if using beef cubes)
1/2 t pepper
croutons
chopped parsley

Directions:
Directions:
Lightly brown ground beef. Add onion, garlic and chopped tomatoes. Cook a few minutes. Put beef stock in large pot; add tomato paste and kidney beans with liquid. Stir in cabbage, salt and pepper. Add meat mixture. Simmer about 1/2 hour.

Garnish with croutons and parsley.
