3 eggs
1 cup oil
2 cups sugar
2 cups grated zucchini
3 t. vanilla
3 cups flour
1 t. salt
1 t. baking soda
3 t. cinnamon
¼ t. baking powder
1 cup nuts (optional)

Directions:
Directions:
Preheat oven to 350º
Beat eggs until fluffy.
Add oil, sugar, zucchini, and vanilla.
Mix lightly but well.
Add flour, salt, baking soda, cinnamon, and baking powder.
Mix until blended.
Add 1 cup of nuts if desired.
Pour into 2 bread pans.
Bake for 1 hour.
