Ingredients:  
3 c cold, left over rice, cooked (cooked 2 c of instant white & brown rice)
3 T butter
3-4 T oil
1/3-1/2 c onion, chopped
1/2 carrot, chopped
1/3-1/2 c cabbage, shredded
1 T minced garlic
1/3-1/2 c edamame (frozen)
1 egg, beaten
1/4 c teriyaki sauce or soy
black pepper
Cooked chicken, bite sized pieces

Directions:
Melt butter in skillet, add oil. Add onions and carrots. Saute til onion is translucent. Add garlic and edamane. Push veggies to one side, scramble egg on empty side of skillet. Mix eggs with veggies. Add cabbage and chicken and season with pepper. Add rice. Stir around. Add teriyaki/soy sauce. Stir fry until steaming hot.

I have used canned chicken in this but is better using previously cooked chicken tenders or meat from a rotisserie chicken.
