Ingredients: 9 eggs 1 pound Velveeta Cheese of choice (We like the sharp cheddar) cut into slices 1 2 cup package of shredded cheese (We like sharp cheddar or Mexican blend) 1 pound package Hash Brown Shreds or 1 pkg of Hash Brown patties 1 pound breakfast sausage 1/2 medium onion diced salt and pepper to taste

Directions:In a skillet add 1-2 Tbs cooking oil and brown hash brown shreds to desired consistency or Bake hash brown patties as instructed on the package. Flip them over mid way through and if they are not extra crispy bake an additional 10 minutes.
While the hash brown patties are cooking, fry the sausage breaking into crumbles adding diced onions until cooked through. Drain on a paper towel.
Grease a 9 x 13 baking dish with cooking spray and line the bottom with the cooked hash brown shreds or patties in a single layer.
In a large bowl whisk the eggs, and salt and pepper.
Place the crumbled sausage and onions over the hash browns
Pour the egg mixture over the hash browns, sausage and onions.
Place sliced Velveeta over the egg mixture.
Cover with foil and bake for 30 minutes at 350 degrees
Remove foil.
Place shedded cheese over the Velveeta and bake another 10 minutes at 350 degree or until golden brown. |
