1/2 c. rice
1/4 c. oleo
1/2 c. onion, chopped
1/2 c. celery, chopped
1 can cream of mushroom soup
1 jar (8 oz.) Jalapeno Cheez Whip
1 box frozen chopped broccoli

Directions:
Directions:
Cook rice. Melt oleo in skillet and saute onions and celery in oleo. Add soup (undiluted), Cheez Whip and broccoli. Simmer and stir until broccoli is thawed. When rice is tender, mix with broccoli mixture. Put in casserole dish and cover. Bake at 350º for 45 minutes.

I’ve been unable to find jalapeño Cheez Whiz so we now use Velveeta with a little milk added and a can of diced green chilies.
