2 Pork Tenerloins
1 cup flour
Salt and black pepper to taste
2 Tbsp butter or olive oil
1 small jar cherry preserves (I like Bonne Maman brand or Smuckers)
¼ cup light cream + 1 Tbsp. flour (optional *)

Directions:
Directions:
Combine flour, salt and pepper in a plastic bag. Flour pork tenderloins and saute all sides in melted butter.

Place meat in baking dish and cover with preserves.

Bake uncovered in 350º oven for 35-40 minutes, basting as needed.

*In a small bowl combine 1 Tbsp. flour with cream. Remove meat from baking dish and stir cream mixture into drippings to make a sauce. Return meat to dish and baste with sauce. Bake 5-10 minutes until ready to serve. Serve sauce with sliced meat.

If you're still eating meat, this recipe never gets old. *However, I have stopped making the sauce and just serve it with the drippings. It's a little lighter and saves some time.
