1 Lb. crab meat
1 Egg beaten slightly
1 Cup bread crumbs
1 Large carrot, diced small
1 Celery stalk, diced small
1 Green onion, chopped
1/2 Bell pepper, diced small
1/2 Tsp. Garlic powder
1/4 Tsp. Cayenne pepper
1/2 Tsp. Dry mustard
1/2 Cup mayonnaise
1/4 Tsp. Worcestershire sauce
1/4 Tsp. Salt


Special Sauce
1 cup mayonnaise
1/2 Tsp. Dry mustard
2 Tbsp. Honey
1 1/2 Tbsp. Cayenne pepper
*Combine all ingredients and refrigerate until ready to use

1.Combine all ingredients except bread crumbs (add a few tablespoons into the mix to hold the ingredients together).
2. Form cakes about 1/4 inch thick
3. Roll into bread crumbs and place on cookie sheet. Use wax paper to separate layers.
4. Place in freezer for 1 hour.
5. Sauté on medium heat about 3 minutes per side until golden brown.

These need special care to keep them from falling apart. We usually fry a little but more than golden brown.
