3 chicken breasts, skinned and boned, cut in pieces
1 egg white - slightly beaten
1 T cooking sherry
1 tsp cornstarch
1 T peanut oil
1/2 c cashews
2 T peanut oil - 1/2 tsp salt
1 8 oz can sliced bamboo shoots
1 8 oz can sliced water chestnuts
4 green onions, cut into 1 inch pieces
3 stalks celery, sliced
1 green pepper, cut 1 inch squares

1/3 c chicken broth
1 T cornstarch
1 T sherry
1 T soy sauce
1 tsp peanut oil

Directions:
Directions:
Cut chicken, combine chicken and next 3 ingredients, mix well and let chill 1 hour. Pour 1 T oil around top of preheated wok. add cashews, stir fry 30 seconds. Remove. Pour 2 T oil around top of wok add chicken and stir fry until lightly brown. sprinkle chicken with salt. Add next 5 ingredients. Stir fry 5 minutes. Combine 5 ingredients. mix well, pour over chick until thick. Sprinkle cashews over the top.
