Ingredients:  
3 cups water
3 cubes chicken bouillon (I use Knorr)
3-4 medium potatoes, cubed
¼ minced fresh onion sauteed in 2 tbsp. butter
1 package frozen chopped broccoli or 1 bunch fresh chopped
2 cups milk
1 pound Velveeta cheese (Can use light Velveeta to reduce fat and calories)
2 tbsp butter, melted + 2 tbsp flour

Directions:
Directions:
Combine water, bouillon, potatoes, onion and broccoli.
Cook until potatoes are tender.
Turn heat down and add milk and cheese.
Stir until cheese is melted.
Keep on low heat.
Combine melted butter and flour and stir into soup to thicken.
Add black pepper to taste.

I often double this recipe. You can freeze some if necessary. If frozen, when you thaw and re-heat, add a little 1/2 and 1/2 or cream to make the creaminess return.
