1/4 c raw almonds
1/4 c aw walnuts or pecans
1/3 pitted majool dates
1/4 tsp almond extract (optional)
dash salt
1/4 c raisins or dried cherries (optional)
1/4 c unsweetened or dried coconut (optional)

Directions:
Directions:
Put almonds, walnuts, and salt in food processor fitted with S-blade and process until coarsely chopped.
Add almond extract and dates and process until mixture begins to stick together. Do not over process.
Optional- add the raisins, dried cherries or coconut and pulse briefly, just to mix.
Transfer mixture to a bowl.

Scoop about 1T of the mixture into your hand and squeeze firmly until it sticks together. Roll into a 1 inch ball.
Repeat until you have used up the mixture.
Refrigerate at least 1 hour before serving.

+/- 6T cacao powder makes them into brownies (raw, unsweetened cocoa powder)

Cookies can be stored in a sealed container in the refrigerator for 1 month or up to 3 months in the freezer.
