Grease pans heavily with “butter”, then dust with:
Mix together: I dust heavy………adds crunch to the crust
May want to double
1/4c. white Sugar
1 teas. cinnamon

Cream in large bowl:
3/4c. butter
3 c. sugar
3 eggs
6 ripe bananas (mashed—leaving small chunks)
½ teas salt
1 16 oz. sour cream
2 teas pure vanilla

Add dry ingredients and mix well:
4 ½ c. sifted all purpose flour
1 T. baking soda
2 teas. cinnamon

Add 1c. walnuts or pecans (Do not grind them, break them in pieces). I always add 2 cups.

Bake 350 Test about 50 mins.

Makes 4 loaves or 2 9x13
Mini loaves……..fill ¾ ( nice in two’s for gifts).
Cupcakes….fill ¾ Bake about 20 mins. Test.
Freezes well, but the crunchy crust becomes slightly soggy.
