3 cups flour
1 tbsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1 cup vegetable oil
2 cups sugar
4 eggs
2 1/2 tsp vanilla extract
4 apples, peeled, cored, and chopped into 1-inch pieces

Directions:

Preheat oven to 350º.
Place oven rack in the center.
Grease a large bundt pan and set aside.
In a large bowl, sift together flour, baking powder, cinnamon, and salt
Using an electric mixer, cream together the oil, sugar, eggs, and vanilla, on medium-high until pale and fluffy.
Add the flour mixture and beat until smooth.
Pour half of the batter into the prepared pan, and layer half of the apples on top.
Repeat with the remaining batter and apples.
Bake until a toothpick or knife inserted into the center comes out clean, about 75 minutes.
Let the cake cool about 15 minutes, then invert the pan onto a wire rack to cool completely.
