2 tsp olive oil
1-2 clove garlic, minced
1/4 cup onion, minced
14 oz can stewed tomatoes, undrained
15 oz can red kidney beans, rinsed and drained
15 oz can corn, drained
15 oz tomato sauce
1 Tbsp chili powder
1/2 tsp oregano
1/2 tsp dried cumin
1/4 tsp pepper
salt or garlic salt to taste
1/4 cup shredded low fat Mexican cheese blend

Directions:
Directions:
Heat oil in dutch oven. Add onion and cook till it sweats - add garlic, cook till aromatic.
Add the balance of ingredients - all but the shredded cheese. Bring to a boil, reduce heat and simmer about 5 minutes or until thickened.

Serve and sprinkle with cheese. Live large, add a dollop of plain greek yogurt, and sprinkle with some chopped green onions for a tasty treat.
