Pepperoni and Asiago Pinwheels Recipe

½ c. grated Asiago cheese
¾ tsp. Thyme
¾ tsp. Oregano
¼ tsp. Pepper
1 sheet frozen puff pastry (half of 17.3 oz. pkg.) thawed
2 T. honey Dijon Mustard
2 oz. pack. sliced pepperoni (abt. 24 1½ " slices)
1 lg egg, beaten

Mix first 4 ingredients. Cut puff pastry in half (2 rectangles), spread 1 T. mustard over 1 rectangle leaving 1" border at 1 long edge. Cut pepperoni in 1/2 and place in single layer on top of mustard. Top with ½ cheese mixture. Brush border with egg and start at side opposite plain border, roll up pastry, sealing at egg-coated side. Transfer to medium baking sheet, seam side down. Repeat with remaining pastry rectangle. Chill rolls until firm (abt 30 minutes or wrap and chill up to 1 day).
Line baking sheet with foil- lightly spray, cut each pastry roll (abt 30 - ¼ " thick rounds). Bake 400º - 15 minutes until golden.
