1 ¼ cups unbleached all purpose flour (or a mixture all purpose and white whole wheat flour)
2/3 cup sugar
½ tsp salt
½ cup butter
4 cups sliced, peeled apples (about 4 medium)
2 tsp lemon juice
1 heaping tsp cinnamon + 1/3 cup sugar, mixed together

Topping:
½ cup sugar (or slightly more)
2 eggs
1/3 cup evaporated milk *
1 tsp vanilla
¾ cup chopped walnuts (or your choice)
1 1/3 cups coconut

Directions:
Directions:
Heat oven to 375 degrees. In a bowl, combine flour, sugar and salt. Cut in the butter until crumbly. Press into the bottom of ungreased 9 x 13 dish. Combine apple slices, sugar & cinnamon mixture and lemon juice in a separate bowl. Mix to coat apples. Arrange apple slices over the base. Bake at 375 for 25 minutes.

Meanwhile, in a small bowl, combine topping ingredients.
Spread mixture over partially baked apple mixture.
Bake an additional 25 - 35 minutes or until golden brown.
Cool before cutting. Recipe makes 24 bars. (Can make the day before and refrigerate.)

* evaporated milk comes in a small can – enough for 2 batches.
