6 bone-in skin-on chicken thighs
Salt & Pepper to taste
2 tsp olive oil
1 onion, sliced
1 c apricot preserves
2 Tbsp soy sauce
1 Tbsp dijon mustard
1 tsp minced fresh ginger
2 Tbsp chopped parsley

Directions:
Directions:
I bowl, whisk together apricot preserves, soy sauce, mustard, and ginger.
Heat oil in large pan over high heat; season chicken and cook 4-5 minutes on each side until golden brown. Add onions to pan and cook 5 minutes or until soft.
Place chicken and onions in cooker. Poue apricot sauce over chicken.
Cook on low for 6-8 hours or high for 3-4 hours.

For IP version cook on Slow Cook setting adding 2 more hours to low setting hours with the More setting
