2 cans black-eyed peas, drained and rinsed
4 whole green onions, finely chopped
1/2 cup celery, finely chopped
2/3 cup red bell pepper, chopped
1/2 cup fresh cilantro, finely chopped
1 jalapeno pepper, seeded and minced
Dressing:
1/4 cup vinegar(apple cider, balsamic, or red wine varieties)
1/2 cup olive oil
2 tsp. Dijon mustard
salt and pepper to taste

Directions:
Directions:
Drain peas, rinse and drain well. Prepare onions, celery, peppers and cilantro. Add peas. Combine dressing and add to pea mixture, stir well. May eat immediately but best if made a day ahead.
