½ cup salted butter, softened (115g)
½ cup packed light brown sugar (100g)
¼ cup granulated sugar (50g)
¾ cup creamy peanut butter (185g)
1 large egg, room temperature*
1 tsp. pure vanilla extract
½ tsp. baking soda
1¼ cups all-purpose flour (spoon & leveled) (160g)
½ cup quick oats* (40g)
¾ cup M&Ms (50g)
½ cup semi-sweet chocolate chips (90g)

Preheat oven to 350°F. Line baking sheet with parchment paper. Cream butter and sugars together about 3 minutes. Mix in order peanut butter, egg, and vanilla. Slowly mix in baking soda and flour. Do not over-mix. On low speed, beat in quick oats, M&Ms, and chocolate chips just until incorporated. If dough is very soft and unmanageable by hand, chill for 30 minutes before rolling. Roll 2 tbsps. dough per ball onto prepared baking sheet. Press a few extra M&Ms on top. Bake 11-13 minutes (cookies will still look a little soft, which is recommended). Slightly press down the baked cookies with the back of a spoon (cookies only slightly spread in the oven). Cool on baking sheet 10 minutes before transferring to a wire rack. Store covered at room temperature for up to 1 week.
