½ cup butter, melted
⅓ cup creamy peanut butter, heaping
1 large egg + 1 yolk
¾ cup light brown sugar, packed
½ cup granulated sugar
2 tsps. vanilla extract
1 cup old fashioned rolled oats (not instant or quick oats)
1¼ cups flour
½ tsp. baking soda
½ tsp salt
1 cup semi sweet or milk chocolate chips (or both)
½ cup peanut butter chips

Directions:

Melt butter and peanut butter together. Cool, add egg, sugars, vanilla and whisk until combined (mixture will be grainy). Add the oats and stir to combine. Add flour, baking soda, salt and stir to combine. Do not overnix, dough will be fairly thick. Add chocolate chips, peanut butter chips and stir. Scoop out cookes and place on cookie sheet, or large plate. Cover with plastic wrap and chill for at least 2 hours up to 5 days (dough is a bit on the oily side before chilling, it becomes less oily once chilled). Preheat oven to 350ºF. Place cookies at least 2" apart on cookie sheet. Bake 11 minutes for soft cookie. It is important this dough chills for 2 hours before you bake them otherwise you will have a flatter cookie.
