cooking spray
2 cloves of minced garlic
2 1/2 c corn (4 large ears)
1/4 c fresh lime juice
1 T olive oil
2T red wine vinegar
3/4 tsp cumin
1/4 tsp salt
1 c halved grape tomatoes
1 c diced red pepper
3/4 c chopped red onion
2 T cilantro
2 T seeded jalapeno pepper
1 T chopped oregano
1 19oz can of beans

Directions:
Directions:
HEAT 2 TSP OIL IN SKILLET AND ADD GARLIC, SAUTE FOR 30 SECONDS, ADD CORN AND SAUTE FOR 8 MIN OR UNTIL BROWN. REMOVE FROM PAN AND COOL COMPLETELY. COMBINE JUICE AND THE NEXT 4 INGREDIENTS, LIME JUICE THRU SALT. WHISK WELL. ADD CORN AND TOMATOES. AND REMAINING INGREDIENTS AND MIX TOGETHER WITH ALL INGRED.
