BREAKFAST BURRITOS Recipe

1 green pepper, chopped
2/3 cup chopped onion
2 tbsp. butter or margarine, melted
8 eggs, beaten
1 cup shredded Monterrey Jack or cheddar cheese
1 16 oz. jar Picante sauce
6 8-inch flour tortillas (I use smaller size if I need a quantity for a large group)
Sour cream (optional)

Directions:
Directions:
Saute green pepper and onion in butter in large non-stick skillet until tender. Combine eggs and cheese and add to skillet. Cook over low heat, stirring gently until eggs are set.

Heat Picante sauce in small skillet until warm. Dip each tortilla in Picante and spoon about 1/2 cup egg mixture into center of each tortilla. Roll tortilla up and place seam side down in lightly greased
13 x 9 pan. Top with remaining Picante sauce. Cover with foil and bake at 350 for 10 minutes. Serve with sour cream if desired.
