1 Cup Sliced Peeled Apples
1 Cup Pecans
1 Cup Thinly Sliced Celery
1 Cup Hellman's Mayonnaise
1/2 Cup Coconut
1 Tablespoon Sugar

Mix all ingredients and enjoy.

This was a handwritten recipe (as most of Mom's favorite recipes were) from Aunt Libbie. The pictures in this book wouldn't be complete without a pic of Mom and Sofi. Mom got Sofi after Dad passed away. Sofi was a rescue dog Mom saved from being "put down" at the vet's office. The vet was her neighbor from across the street. He called Mom and told her a bunch of dogs had been chasing a mans cows so the man rounded them all up and dropped them at the vet's office. After several tries to find homes for them, he was forced to put them all down but he recognized Sofi as a good breed of dog and called Mom. He gave Sofi her shots, trimmed her up and bathed her. I'm not sure who rescued who...but Mom sure loved her!
