3 eggs
2 c sugar
1 c vegetable oil
2 c grated, unpeeled, raw zucchini
3 tsp vanilla extract
3 c all-purpose flour
1 tsp salt
1 1/4 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
2/3 c chopped walnuts (optional)

Directions:
Directions:
Preheat oven to 350 degrees.
Mix eggs, sugar, vegetable oil, grated zucchini, and vanilla.
Add flour, salt, baking soda, baking powder, and cinnamon. Mix all ingredients.
Add the chopped walnuts now. Do not stir too much, as this is a quick bread.
Grease and flour two bread pans and pour the above mixture into them.
Bake at 350 degrees for approximately one hour.
Place on a rack to cool.

Doubling recipe works well.
