Tomato Sauce

2-3 cloves garlic, minced 6 ounce can tomato paste
4 tbsp. chopped parsley 28 ounce can pear-shaped tomatoes
1-2 tbsp. olive oil ½ cup red wine or water
1 tsp salt, or to taste 1 tsp sugar
pepper 1 bay leaf
¼ tsp dried basil
¼ tsp dried oregano

In a large pot sauté garlic and parsley in olive oil. Stir in the rest of the ingredients. Bring to a boil, then lower to simmer and cover. Simmer for about an hour, stirring occasionally.

8 ounces cooked ziti, or any other similar shaped pasta
8 ounces mozzarella cheese, shredded
1 cup cottage cheese
tomato sauce
parmesan cheese

Mix together the cooked ziti, ¾ of the shredded mozz, cottage cheese, and sauce in a large bowl. Spread in a baking pan, top with remaing mozz, and parmesan cheese. Cover with aluminum foil. Bake 350º between 30 to 45 minutes, until mixture is bubbly.
