Baked Jalapeno Poppers Recipe

12 jalapeno peppers
1 cup extra sharp cheddar cheese
3 oz. Cream cheese
teaspoon garlic powder
teaspoon ground Chipotle pepper
2 large eggs
⅔ cup plain breadcrumbs
teaspoon salt

1. Preheat oven to 325. Lightly oil a baking sheet and set aside.

2. Cut peppers in half lengthwise; scrape out and discard seeds.

3. In a small bowl mix together cheddar, cream cheese, garlic powder and Chipotle pepper. Fill each pepper half with some mixture.

4. In one bowl lightly beat eggs. In another bowl stir together breadcrumbs and salt. Roll each pepper in egg, then breadcrumbs. Place on baking sheet.

5. Bake until tender and browned, about 30 minutes. Serve warm
