1 (15 - 16 oz) can pink salmon
1 egg
⅓ cup onion chopped
⅓ cup flour
1½ tsp baking powder
1½ cups Crisco
1 or two jalapeños
2 aged potatoes, mashed
seasoning of choice to taste

Directions:
Directions:
Drain salmon, set aside 2 T juice. In medium bowl, mix salmon, egg, and onion until sticky. Stir in flour. Add baking powder to salmon juice and stir into salmon mixture. Add seasoning and mashed potatoes. Form into small patties and fry until golden brown in hot Crisco. Serve with tartar sauce and ketchup.
