2 eggs beaten
1 cup oil
21/2 cups sugar
3 cups grated zucchini
¾ cup nuts (optional)
3 cups flour
1 T vanilla
1 T cinnamon
1 tsp salt
1 tsp baking soda
Directions:
Directions:
Mix all ingredients except nuts. Stir nuts in last. Bake in greased and floured loaf pan. Makes 2 pans. Bake 1 hour at 350 degrees.
