3 chicken breast
1 onion
1 yellow bell pepper
2 cloves garlic
1 can cream of mushroom soup
2 can green chili enchilada sauce (mild or medium)
1 14oz can fire roasted diced tomatoes
2 cup minute rice

Directions:
Directions:
Dice raw chicken info chunks. Dice onion, pepper and garlic. Put all in a skillet with little oil and cook until chicken is done. Put in a covered stock pot and add cans of soup, enchilada sauce and tomatoes.
Cook 2 cups of rice and add to pot. Stir in and keep on low for 10 minutes
