4 oz of unsweetened chocolate
2 cups half and half
3 eggs slightly beaten
1½ cups granulated sugar
2 cups whipping cream
2 tsp vanilla
5 lbs ice in small chunks or cubes
2½ cups rock salt
4 oz semi sweet block chocolate cut into random pieces

Directions:

Combine unsweetened chocolate with half and half in a sauce pan. Cook stirring constantly with a wire whip over medium heat until chocolate is melted (mixture may have small specks of unmelted chocolate). Remove from heat. Whisk eggs in a small bowl. Beat some hot chocolate mixture into the eggs. Pour the eggs into remaining hot mixture in sauce plan and whisk until thickened. Gradually beat in sugar, cream, vanilla. Pour into canister of ice cream freezer. Assemble freezer and layer ice and rock salt one quarter at a time around canister. Churn for 30 to 40 minutes (if using electric cream freezer) or until frozen. After ice cream is done, stir in chocolate pieces until evenly distributed. Place into freezer containers, freeze firm.
