2½ - 3 pound pot roast
1 - 2 T. oil
1 large onion, sliced (I use pearl onions)
1 ½ cups water
¼ cup soy sauce
⅓ cup dry sherry
2 T. sugar
1 cube or 1 tsp. beef bouillon
1 stick cinnamon (I use a heaping tsp of ground cinnamon)
8 carrots, halved
4 potatoes, peeled and halved

Directions:
In a large fry pan or Dutch oven, brown roast in hot oil, adding onion during last half of browning time. Add remaining ingredients except carrots and potatoes. Simmer, covered, 2 to 3 hours or until meat is tender. Add carrots and potatoes. Simmer, covered 30 minutes or until vegetables are tender, occasionally spooning sauce over vegetables. If desire, juices may be thickened with about 1 T. cornstarch dissolved in ¼ cup cold water. Add to juices and allow mixture to boil.
