12 pieces white sandwich bread

12 eggs
⅓ c milk
1 tsp vanilla extract
cinnamon
nutmeg

Directions:

Mix all ingredients in a blender. Pour into a pie plate or pasta bowl, large enough to lay a piece of bread flat.
A lot of people like to just coat the outside of the bread, but I prefer to really soak it. Turn the bread over and press lightly with a spatula to encourage the bread to soak up the egg mixture.

Place in a greased skillet, heated on medium. Sprinkle with more cinnamon/nutmeg, to suit your taste. Repeat with remaining bread. Heat, covered, until the bread puffs up as the egg inside it cooks. Be careful it's not too hot at this point, or it may burn before the egg mixture is cooked through. Once the bread puffs up and is turning golden, flip the toast to cook the other side til golden.

Serve with syrup and garnish with fruit. :)

these do freeze well; layer with parchment paper and store in an airtight container or freezer-safe Ziploc bag for a delicious, easy breakfast!

STUFFED FRENCH TOAST:
You can mix fruit with cream cheese, then spread it between to pieces of bread. Dunk your new "sandwich" in the egg mixture, then cook like normal. Voila! This makes a decadent and impressive breakfast.
