1 whole chicken 3-4 lbs.
1C diced onion
2 celery stalks sliced into half rounds
3 carrots sliced into half rounds
2tsp. minced garlic
2 bay leaves
1tsp. dried thyme
1 1/2 tsp. dried parsley flakes
1C fideo noodles
3 chicken bouillon cubes
cold water as needed
salt/ pepper
garlic powder

FOR BROTH
in a large stockpot add the whole chicken, bay leaves, chicken bouillon, parsley flakes, cold water to fill the pot 3/4 full, add salt and pepper, garlic powder, bring to a boil and then reduce to a simmer, cook for 1 hour
FOR THE SOUP
remove the chicken and let cool, remove bone and skin and chop or shred the meat and return to pot
add the rest of the ingredients, salt and pepper, poultry seasoning, and more parsley and continue to simmer for another 20 minutes
taste and adjust seasoning, remove bay leaves and serve
