1 stick butter
7 - 8 large Vidalia onions cut into chunks (you can substitue Texas Sweet Onions)
1/2 c. uncooked rice
5 c. boiling water
1 c. grated swiss cheese
2/3 c. half & half
salt and pepper
1 c. bread crumbs

Directions:
Directions:
Melt butter in large skillit over med. heat. Add onions and saute until transparent. Remove from heat. Preheat oven to 350. cook rice in boiling water for 5 minutes and drain well. Blent into onions along with cheese and half and half. Season with salt and pepper. Turn into 2 qt. baking dish. Bake 1 hour. Top with butter 4 tbsp melted butter mixed with bread crumbs.
