Smoked sausage
Potatoes, peeled and boiled
Bunch of boerenkool (kale)
Butter
Milk
Salt and pepper

Directions:
Directions:
Take a bunch of boerenkool and cut out all coarse stems, boil the leaves until soft (not too long) and then finely chop. Add to boiled potatoes with butter, milk and salt and pepper. Mash together.

Boil sausage separately in water and cut up (or can be boiled in same pot as potatoes). Serve on top of mashed mixture.

Use a fair bit of leaves, Opa always said better too much than not enough!

Use Dutch smoked sausage, Oma used European Style Meats from Country Meat Packing. Oma also usually ate it with a bunch of speck and used the bacon fat over the potatoes (Opa’s favorite way to have it!).
