4 tbsp Margarine

1¼ cups Vanilla Cookie Crumbs

2 tbsp Amaretto

3 oz Semi-sweet Baking Chocolate

3 tbsp Milk

2 - 8 oz packages of Cream Cheese

3 eggs

1¼ cups of sugar

1 cup dairy Sour Cream

½ tsp Cinnamon

½ tsp Almond Extract

Place margarine in a microwavable 9 in high sided layer cake pan. Microwave until melted. Stir in cookie crumbs and pat mixture on bottom only. Microwave for 2 minutes. Sprinkle Amaretto over crust. Set aside.

Unwrap squares of chocolate and place in large glass mixer bowl along with milk. Microwave 50% (medium) 4 min; stir. Add cream cheese and microwave 50% 4 minutes, or until cheese is softened. Place bowl on mixer stand and mic (beat) mixture on medium high. Add eggs then sugar. Beat well. Add sour cream, cinnamon and extract; blend.

Pour into prepared crust. Microwave on 70% (medium-high) 13 to 15 min, rotating once midway through cooking.
Center should jiggle slightly when set. Cheesecake will firm considerably after refrigerating. Chill 2 hours or more before serving . Serve topped with whipped cream flavored with 1 to 2 tablespoons Amaretto. Garnish with sliced toasted Almonds.
