3 cups flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1/4 tsp. pumpkin spice
3 eggs
1 cup oil
2 cups sugar
2 tsp. vanilla
1 cup zucchini, grated
1/2 cup carrots, grated
1 banana, mashed

Directions:

Mix dry ingredients together. Blend eggs, oil, sugar and vanilla. Mix in with the dry ingredients and other remaining ingredients.

Grease and flour** - 2 large loaf pans. **I use a cinnamon and sugar mixture instead of flour after I grease the pan. It makes a yummy crunch cinnamon & sugar crust.
Bake at 350 for 50-60 minutes. Test with a toothpick to tell if done. Cool on a rack 10 minutes then remove from pan.
