2 pounds ripe good tomatoes (or cherry tomatoes ) at room temperature
2-3 garlic cloves
1/2 teasp salt
6 large fresh basil leaves (or more)
1/4 teasp crushed red pepper flakes or to taste
1/2 cup extra virgin olive oil
1 cup or more small cubed fresh mozzarella

Rinse the tomatoes and wipe dry. (I peel unles I use cherry tomatoes.) Cut out the cores and any tough parts. Working over a big mixing bowl chop the tomatoes and drop into bowl. Smash the garlic cloves and peel and chop into fine pieces. Scatter the garlic over tomatoes: stir gently. Cut the basil leaves into thin strips and add o mixture with pepper flakes. Pour in the EVOO; stir and fold to coat the mixture. Cover and let marinate at room temp for 1-2 hours.

When its time to serve, cook pasta until al dente. Drain and add to tomato mixture while still hot. Mix together well and serve immediately.
