6-broiler-fryer chicken breast - 1 (16 oz.) can stewed tomatoes - 1 T. curry powder (or to taste) - 1 t. salt -
1 lg. McIntosh apple, peeled, quartered, thinly sliced - ¼ chopped cashews - ¼ tsp. paprika

In a 3 qt. baking dish, mix together tomatoes, curry and salt. Stir in apple, onion, cashews and currants. Place chicken on top of tomato mixture. Sprinkle paprika on chicken. Bake, uncovered on 400 degree oven 1 hour, or until fork can be inserted in chicken with ease.

Serve wild with wild rice.

This is my best friend's Lynda’s recipe —This is the last meal we had at her house for Mother’s Day 2003, and I bugged her for days after that to have the recipe. She died 5 weeks later.

When I make this dish, I use chicken pieces, omit the cashews and put I put the sauce on the chicken and bake it for more than an hour, until the meat falls off the bones.
