4 boneless skinless chicken breasts (4 oz ea.) – 1 T. canola oil – 2 cans (14 ½ oz.) diced tomatoes - 2/3 C. julienned green peppers – ½ C. finely chopped celery – ½ C. sliced onion – 1-2 t. chili powder – 1 t. dried thyme – ½ t. pepper – Hot rice

In a non-stick skillet coated with cooking spray, cook chicken in oil over medium heat for 5-6 min. on each side or until juices run clear. Remove and keep warm. In the same skillet, combine all the other ingredients and bring to a boil. Reduce heat. Cover and simmer for about 10 min or until vegetables are tender. Return chicken to pan. Cook for 15-20 minutes more. Serve with hot white or brown rice. Better made the day ahead.
