1 Lg onion, diced
10-15 mushrooms, sliced
1-2 sm zucchini, diced
4-5 garlic cloves, diced small
2 lbs lean ground beef
2 cans tomato sauce
1 can diced stewed tomatoes
2 tsp Basil
2 tsp Oregano
1/2 tsp Thyme
Red pepper or cayenne pepper - to taste
1 T each Olive oil and butter
Oven ready lasagna noodles
Large mozzarella cheese shredded
Parmesan cheese shredded

- Preheat the oven to 350 degrees
- In a large sauce pot add the olive oil and butter, melt the butter
- Add the onion mushrooms and garlic, cook until the onions are translucent
- Add the ground beef some 1 tsp oregano, 1 tsp basil and a pinch red pepper, salt and pepper, cook until meat is browned
- Add the zucchini, tomato sauce and stewed tomatoes, 1 tsp oregano, 1 tsp basil and a pinch red pepper, salt and pepper,
- Bring to a simmer, let simmer for 20-30 mins
- Preheat the oven to 350 degrees
- Put a thin layer of sauce on the bottom of the lasagna pan
- Then layer as follows: noodles, sauce then mozzarella cheese until the pan is full, end with mozzarella cheese on the top
- Add a layer of Parmesan cheese on top of the mozzerella
- Cover with foil and cook for 45 mins
- Remove the foil and cook for 15 more mins
- Remove from the oven let sit for a few minutes then serve

The sauce is my spaghetti sauce just add some meatballs and serve over your favourite pasta.
