2 qts water (8 cups)
1 cup uncooked rice
4 cups milk
4 tbsp butter
2 pinches salt
1 cup canned evaporated milk

Directions:
Directions:
Bring water to a boil. Reduce to medium bubbling. Cook about 45 min. Stir often. Beat 4 eggs with mixer. Add 2 cups sugar and 2 tsp vanilla. Take a cup of the hot milk mixture and add to eggs. Whip and take whipped eggs, etc. and put into rice and cook a few minutes more. Stir Constantly. This is close to the end. It will thicken the mixture and will thicken more after it cools. Cool and refrigerate.
